"meal assembly"

I've heard a lot of conflicting reports about these meal assembly stores where people go in and create dinners they then cook at home. Still, the concept intrigues me. Does anyone have any experience with these places?

I'm thinking of keeping it small and narrow in my marketing. I want to sell to households of one to two people - the idea of a "date night in"

This is a concept that seems to only work in very large cities, even then, it takes a lot of effort to market properly.

Something you may want to consider is being a personal chef and market accordingly. You can get census information from your county clerk's office for a nominal fee.

Also, talk to your local Small Business Development Center. They will help you for free.

A research link: http://www.restaurant.org and http://www.chef2chef.n et -- see their forums.

Good luck to you!
