It seems like people are viewing you too much as a friend and not respecting that you are running a business. I believe you should do as child day care providers do and charge hourly for being late after the designated time. For example, you could charge 10-15 dollars every hour after your agreed upon time. Also I would probably have contracts on file for each customer with the designated times and specifying that they will be charged for anytime after the agreed upon times. Always have things in writing.
